One of my favorite things about the summer months…cold, refreshing drinks! And let me tell you, this strawberry mojito mocktail hits the spot. Not only is it refreshing with fresh strawberries, lime, & mint, it’s delicious and incredibly easy to make with just a few ingredients.

With the summer season just around the corner, this mocktail recipe is the perfect drink to serve at those summer parties, when lounging by the pool, or when you’re just hanging out in a hammock on a hot day.

But honestly, I could drink this all year long…it’s that good!

This strawberry mojito is a mocktail which means there is no alcohol added to this drink. The kiddos can enjoy this (they’ll think they’re so cool!) along with the adults and it’s a great drink option at a party for those that don’t drink alcohol.

This strawberry mojito mocktail recipe is based off the original mojito cocktail, but does not include the alcohol.

Ingredients


  • Strawberries: Washed, stems removed, and sliced.
  • Mint Leaves: Fresh is always best. You’ll get the freshest mint flavor and you wouldn’t want dried mint bits floating throughout the drink, yuck!
  • Fresh Lime Juice: Store bought lime juice will work in this recipe, however you’ll get the most flavor out of squeezing your own fresh limes.
  • Lemon Lime Soda: Feel free to use club soda in place of the lemon lime soda, however you may want to add a tablespoon or so of sugar to add a little sweetness.
  • Ice Cubes: These are optional, but what is a summer drink without the ice cubes!


Garnish


  • Granulated Sugar
  • Lime Zest
  • Lime Ice Cubes: We’ll talk about these in a minute!
  • Fresh Mint Leaves

How to Make a Strawberry Mojito Mocktail


Step 1


Add the sliced strawberries and mint leaves to a pitcher. Using the end of a wooden spoon, muddle the strawberries and mint together to combine their flavors. Muddling is basically crushing fruit & herbs to draw out their flavors & essential oils to help mix them into the drink.

Smash the strawberries so they begin to liquify, and make sure to not muddle the mint leaves too harshly. You don’t want tiny bits of mint in the mocktail, you want the mint leaves left largely intact.


Step 2


Once the strawberries and mint leaves are perfectly muddled, add the lime juice & the lemon lime soda to the pitcher. Mix together to combine.


Step 3


In a shallow bowl, combine the granulated sugar & lime zest. Rim each glass with lime juice and then dip into the sugar & lime mixture.


Step 4


Add ice cubes to your glasses and pour the strawberry mojito mocktail into each glass. Garnish with a lime ice cube & mint leaves. Enjoy!

How to Make Lime Ice Cubes


Citrus ice cubes are a fun way to elevate your summer drinks! I found this citrus ice cube mold at Williams-Sonoma and have been using it to make lime, lemon, & orange orange ice cubes. It’s such a fun variation to the normal square ice cube!

Here’s how to make lime ice cubes for this strawberry mojito mocktail.


  1. In a clean citrus ice cube mold, pour enough water in each mold to fill it about 1/4 of the way full.
  2. Add a thin slice of lime (about 1/4″ in thickness) to each mold.
  3. Then, pour more water into each mold to cover the lime, filling all the way to the top of the mold.
  4. Freeze until frozen, and then drop lime ice cubes into drinks.

Yes. You could easily swap out the strawberries for raspberries, blackberries, or even blueberries would be delicious in this drink.

You sure can!

Ingredients

  • 15 Strawberries stems removed & sliced
  • 4 Large Mint Leaves
  • 2.5 cups Lemon Lime Soda Sprite
  • 1/8 cup Fresh Lime Juice
  • Ice Cubes
Garnish
  • 1/4 cup Granulated Sugar
  • 1 tbsp. Lime Zest
  • Mint Leaves
  • 4 Lime Ice Cubes
Instructions

Add strawberries and mint leaves to a pitcher. Using a wooden spoon muddle the strawberries and mint leaves together being careful not to tear the mint leaves into small pieces.
Add the lime juice and lemon lime soda to the pitcher. Stir to combine.
In a shallow bowl, combine the granulated sugar & lime zest. Rim the glasses with lime juice and then dip into the sugar & lime mixture.
Fill glasses with ice cubes. Pour the virgin mojito mixture over the ice. Garnish with extra mint and a lime ice cube. Serve immediately and enjoy!
