Sweet Soy Instapot Chicken Thighs

My sweet soy Instapot chicken is sweet, savory, and easy! Make it ahead of time to let the juices sit with the chicken or make it on a workday for a quick dinner!


This was definitely a “I don’t know what I’m going to do for dinner on a Wednesday and ooh I found this frozen chicken, let me add stuff to it and let the Instapot do all the work” kind of meal. You all, have those types of meals, riiight??


I threw in whatever veggies I had and I think potatoes, would be good too! Or pearl onions (pearl onions are not veggies I buy because I associate them with fancy old school French cuisine and I am too much of a peon to buy them). Whatever is languishing in your fridge!

Ingredients

  • 4 chicken thighs, boneless and skinless
  • 4 cloves garlic, chopped
  • 1 small onion, sliced
  • 1 small carrot, diced
  • 1 green onion, chopped
  • 1 inch ginger, peeled and chopped
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar, honey, or regular sugar
  • 1 tbsp apple cider vinegar, white wine vinegar, or red wine vinegar
  • salt and pepper, to taste
Instructions

Put all ingredients in Instapot. Set Instapot to manual for 15 minutes.
Let the Instapot naturally release for 10 minutes and then let it release.
Set Instapot to sautee. Then using two forks, shred the chicken thighs while the sauce reduces. Stop when the sauce is reduced by half.
