Tortellini Chicken Soup
I am a big fan of chicken soup, who isn't? Sometime instead of the typical noodles, I'll throw in some tortellini's to give it a little more flair!
The first thing I always do with chicken soup, is boil the chicken by itself. This takes about 10 minutes.
I makes a white foam that I discard and put the chicken on the side to dice.
While the chicken cooks, I chop onions, carrot and celery. I also like the Miso Ginger broth from Trader Joe's and use it in a lot of soups. For this recipe, I use a cup of regular chicken broth and a cup of the Miso Ginger broth.
After removing the cooked chicken, and dumping the water, I add all the vegetables and broth back in the original pot.
I let this cook for about 30 minutes until the vegetables are tender.
At this point I will add the tortellini pasta and diced chicken back into the pot and cook for another 10 to 5 minutes.

Ingredients
- 2 pieces of chicken breast
- 1/2 chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- garlic salt to taste
- 2 cups chicken broth
Instructions
- boil the chicken for 10 minutes then discard the water and put the chicken on the side
- dice the vegetables
- add the vegetable and broth into the bowl with some salt to taste and cook for 30 minutes until vegetable's are tender
- add diced chicken and tortellini pasta into the pot and cook for another 10 to 15 minutes
