And this quick and easy tortellini soup has lots of flavor. Plus, you can make it with or without the diced tomatoes. ‘

Spinach Tortellini Soup

I started making this recipe years ago when my kids were very young. One of the reasons I loved it so much was it is so easy to make and packs a lot of nutrition.


Back in the day, I made it often with diced tomatoes, but when my kids would pick them out every meal, I got smart and just omitted them.


And you know what?


It’s really good without the tomatoes too!

Plus it was a go-to for me when we were running from activity to activity. I love that it takes minutes to make, is kid-friendly and packs a lot of flavor.


Oh and my kids weren’t fans of the spinach either, but I kept telling them if the meal has pasta in it, they had to eat it.


And you know what?

They did!


This tortellini soup recipe is also a great way to use fresh spinach from the garden. However, frozen spinach works just as well.

Recipe details

Ingredients

  • 5 cloves garlic, minced
  • 1 tbsp extra virgin olive oil
  • 1 package fresh or frozen spinach
  • 60 oz can of chicken stock
  • 28 oz petite diced tomatoes (optional)
  • 1 package fresh, dry or frozen tortellini
  • parmesan cheese for garnish
Instructions

Heat extra virgin olive oil.
Add garlic and saute until it softens and releases that odor.
If using fresh spinach, add fresh spinach and saute until cooked down.
Add chicken stock and heat to boiling.
If using frozen spinach, add it and cook it directly in the soup.
If adding tomatoes, add it now too.
Cook for about 7-10 minutes so flavors combine.
Add tortellni and cook according to package directions.
Top with parmesan cheese.
Tips
  • This recipe can also be prepared ahead of time. Just wait to cook the tortellini until prior to serving.
