Impress your family and friends with this gorgeous looking pesto.
There is nothing like a homemade Pesto! I kicked this one up a bit by adding yummy roasted pistachios and buttery avocado. It's almost too gorgeous to eat. The flavors are absolutely amazing together so get your blender or food processor ready and let's make this easy delicious pesto!

Ingredients
- 1 cup fresh basil leaves
- 1/2 cup fresh flat-leaf parsley leaves
- 1 clove garlic, peeled
- 1/4 cup fresh roasted salted pistachios
- 1 medium avocado
- 1/2 cup olive oil
- Juice from 1 small lemon
- Sea salt, to taste
- Black pepper, to taste
- Red pepper flakes
- Toasted French bread, for serving
Instructions
- Place basil, parsley, garlic, pistachios, avocado, olive oil, lemon juice, salt and pepper into a high powered food processor.
- Process together until well combined.
- Spread on toasted bread and sprinkle with red pepper flakes!
