Cucumber Greek Salad

Enjoy this light salad for your next lunch. Serve it as a side dish with dinner or bring it along for your next BBQ or gathering and get ready to be showered with compliments. This salad is so easy to put together and compliments a meal or can be a meal in itself if you are vegetarian. I love feta cheese on all salads and the tartness of the lemon juice will have you wiping your drool from your mouth after every bite!

This looks like spring in a bowl. Look at all that color! Feel free to use greek olives. I only stock up on the black kind.

The dressing is so tasty!

Mix it all up in a bowl and chill in the fridge (if you can wait much longer).

Ingredients
Salad
  • 2 Cucumbers; peeled, seeded and chopped
  • 2 Roma Tomatoes - chopped
  • 1/2 Purple Onion
  • 10 Sliced Black Olives
Dressing
  • 1/4 C Olive Oil
  • 1 1/2 TBSP Lemon Juice fresh or bottled
  • 2 tsp Oregano
  • 1/2 C Feta Cheese
  • Salt and Pepper, garlic powder and onion powder to taste
Instructions

Peel, seed and chop cucumber and put in a medium bowl. Cut and seed roma tomatoes, chop onion and mix all in a bowl with cucumber.
Mix together dressing and pour over salad. Add Feta Cheese. Mix well. Can chill in the fridge before serving.

    Hi. Do you add the olives at the end? I didn't see when to add it (as of feb 6/22).

    I guess it doesn't matter?

    Also, can i use sliced Kalamata olives instead and seedless cucumbers, with the skin on?
