This porridge was inspired by one of my favourite cake recipes from the ARAN cookbook, its such a lovely combination of flavours and textures. The original cake uses hazelnuts, but I used walnuts instead for this porridge but feel free to use either! Don't be afraid to add a pinch of salt to your oats - it really brings out the flavours in everything else. The coffee in this mixture gives such a pleasant bitterness against the sweet caramelised pear, so I really hope you enjoy this one! Also, if you have a coffee machine you can use a shot of fresh coffee for an extra fancy morning bowl!

Ingredients

  • 100g (1 CUP) Oats
  • 250-350ml (1-1.5 CUPS) Milk or Water (or 50/50)
  • 2 Tsp Instant Coffee (dissolved in a little hot water)
  • 1 Tsp Sugar 
  • 1 Pear, Sliced
  • Handful of Walnuts, chopped
  • Pinch of Salt
Tips
  • Make the porridge base by mixing the oats with the milk, sugar, coffee and a small pinch of salt and heat over a low heat for 10-15 minutes until thick and creamy, adding a little more milk or water if needed.
  • Meanwhile heat a little butter and cook the sliced pears on each side for a few minutes until nicely caramelised and golden. 
  • Bowl up the porridge, add the pears on top and sprinkle some few chopped walnuts over it.
