Homemade Bánh Mì

Bánh mì is the Vietnamese word for bread. In Vietnamese cuisine, it also refers to a type of short baguette with thin, crisp crust and soft, airy texture inside that is often split lengthwise and filled with various savory ingredients and served as a meal.


This recipe I use pan seared chicken, a quick pickled Asian seasoned vegetable mix, and a spice mayonnaise.


Many banh mi recipe are made with pate as well, the pickled vegetables and lots of fresh coriander are what make this sandwich special.

It may seem like just a sandwich but the mix of pickles, chicken, cilantro, spicy mayonnaise, and fresh baguette makes this sandwich fresh and different then just your regular deli sandwich.


I have created the “at home” version so it can be made by everyone and enjoyed as a quick lunch or even dinner.


In our kitchen in the restaurant I make it for the staff and it’s a huge hit.

Ingredients
For the pickled vegetables
  • 1 radish cut julienne
  • 1 kohlrabi cut julienne
  • 2 carrots cut Julienne
  • 1 tablespoons spoon chopped fresh ginger
  • 1/2 cup Mirin
  • 1/2 cup rice wine vinegar
  • 1 teaspoon salt
For the spicy mayonnaise
  • 4 Tablespoons mayonnaise
  • 2 Tablespoons sirracha
  • 1/2 tablespoon lemon juice
  • 1 teaspoon salt
For the sandwich
  • 1 fresh baguette
  • 5 slices thin chicken breast pan seared
  • 1/2 bunch fresh cilantro leaves
  • 1 chili sliced for garnish
Instructions
For the pickles
Heat the Mirin,rice wine vinegar, and salt in a sauté pan
place at the sliced vegetables in a bowl, once the liquid is boiling place over the vegetables and immediately place in the refrigerator to cool it down.
after cooled, add in the ginger - and that is the pickled vegetables for the sandwich, used without the liquid, but you can save the liquid for the next sandwich:)
For the sandwich
slice the fresh baguette in half
add the spicy mayonnaise on both sides
place the chicken breast in the baguette, then the picketed vegetables, finish the sandwich with the bunch of fresh parsley and then top it off with some sliced chili
Tips
  • If you love spicy you can make the spicy mayonnaise spicier by just adding more sirracha.
