On another note, every week I meal prep a couple dishes I can add into different meals. This week I made mashed sweet potatoes & have used it for breakfast, lunch, and dinner. Here's an idea on how to incorporate sweet potatoes into your breakfast or dessert that is NOT boring. Did I mention there's no added sugar? I usually make this in the Fall but there's no rule saying I can't make it year round.


Now, if you are diabetic or watching your carbs/blood sugar, this meal is high in carbs. However, it is a natural source of complex carbohydrates with added fiber, vitamins, and minerals.

Ingredients
Mashed Sweet Potatoes
  • 2 peeled and chopped sweet potatoes
  • 1/4 cup milk (or milk alternative)
  • 1/4 cup coconut oil
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/4 cup maple syrup
Dessert Bowl Toppings (optional)
  • 2 tbsp Greek yogurt
  • 1 tbsp pumpkin seeds
  • 1 tbsp pecans
  • 1/2 sliced banana
  • 1 tbsp dried cranberries
  • 1 tbsp coconut flakes
  • 1 tbsp almond butter
Instructions
Mashed Sweet Potatoes
Boil 1 medium pot of salted water over high heat
Add in 2 medium chopped sweet potatoes
Boil for 15-20 minutes or until tender
Using a hand masher or electric mixer, blend sweet potatoes, milk, coconut oil, maple syrup, and spices until desired mashed consistency
Tips
  • Add any toppings you would like; nuts, fruits, peanut butter, etc.
  • This recipe calls for 1-2 servings. If you want a larger serving to meal prep or serve more people, boil 5 sweet potatoes
  • This recipe contains 48 gm carbohydrate, I recommend eating half the serving or adding protein/fat heavy toppings if you are diabetic
