Since the weather has been so cold here, I was searching for a leftover ham recipe for soup that would warm me up. This hearty ham and bean soup is perfect.

Ingredients

  • 1 15 ounce can of cannellini beans (white beans)
  • 3 cups of water
  • 2 cups of cubed leftover ham, diced (or substitute hot dogs or kielbasa)
  • 1 cup of green peas
  • 2 carrots, sliced
  • 3 red potatoes, diced
  • 1 tablespoon ready to use minced garlic
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • salt and pepper to taste
