Do you know what soffritto is?


It’s the base for loads of italian dishes. Especially for pasta sauces, like a bolognese, making a “soffritto” is the first fundamental step for having a good result. And soffritto is also used for loads of other things, like roasted meats, minestrone and even some fish dishes.


That’s why in the fridge of every Italian you will always find the base ingredients for it: celery, onions and carrots!!! And if they don’t have them it’s because they will have already have some pre-prepared in their freezers!


Below is the simple procedure on how to prepare it and how to cook it!

Ingredients

  • 1 carrot
  • 1 big onion
  • 2 celery stalks
Instructions

Sharpen your knife and simply chop them into tiny cubes! If you are fed up of chopping by the time you get to the carrots, you can grate those if you prefer.
How to cook it: Put a tablespoon of olive oil in a pan and add your mix in the desired quantity. Let it sauté on a low heat for 5-10 minutes until softened and starting to colour, then proceed with adding the rest of the ingredients as per recipe. If it’s bolognese that would be the mince or lentils (if veggie). These doses are just enough for a tomato-based sauce for 3.
