Kade is a Kurdish pastry stuffed with cheeses, no fried. Usually baked for Shavuot holiday in Israel, the kade is a pastry stuffed with delicious and special things, and some even add sugar to it instead of the cheese filling.

The dough can even be made with your hands for those who do not have a mixer, you just need a smooth and good pan. It can come in a form of a crescent, a whole circle, square, or any other shape. It’s completely up to you and what you like.

Ingredients
Dough
  • 1 kilo of sifted white flour
  • 150g soft butter, dice-cut
  • 1-2 tablespoons dried yeast
  • A tablespoon of salt
  • 2-3 cups lukewarm water
Preparation of the cheese for filling
  • 1 kilo salty cheese (hemed)
  • 50g butter

  • Small bowl with water
Instructions
Preparation of the dough:
Knead all the ingredients into the dough, about 10 minutes until the dough is soft and flexible.
Cover the dough with plastic wrap and let it rise for an hour.
Preparation of the cheese filling
- Tow the kilo of cheese with a grater into a bowl, add the 50 grams of butter, check if there is any salt missing. .
After the dough has risen, form into small balls

Each ball open with a rolling pin to an ellipse shape and fill the edge with a large spoon from the cheese mixture.
Before closing the dough to the desired shape, dip your finger in the small bowl of water and rub it on the edges of the ellipse shape (helps close well).
Close the dough circles to a half moon shape and tighten tightly at the edges
Heat a Teflon pan or any smooth pan you have, no oiling is needed at all, then when the pan is well heated, place the pastry in the pan closing dough side down.

Tips
