Gluten Free Yummy Cookies

These are the easiest Gluten Free Cookies ever... no preheat, no baking, just mix and eat!


Ingredients:

(1) 8 oz. package pitted dates

1 cup almond flour

1 t vanilla

1/4 t sea salt

1/4 c dark chocolate chips (you can use more if you wish)

I throw all of the ingredients into my food processor and mix it all together. 


Spoon the dough into your hand and roll into balls. If your dates are a little dry, you can add a few drops of water to make the dough easier to roll into balls and so it sticks together. This will make 12-15 balls. If you like chunks of chocolate in your cookies, you can leave the chocolate out and mix the dough and add the chocolate later. I like mine smooth and everything mixed all at once.


No added sugar, the dates are sweet enough. You could also use any chocolate chip you choose, it does not have to be dark chocolate, it is just what I prefer.  


The gluten free lifestyle is not for everyone, but when you have to live this lifestyle, then you get accustomed to it and make the most of it. I found I was feeling so much better once I eliminated wheat from my diet. Since I have a wheat, barley, and rye allergy, it affects my lungs, making it difficult for me to breathe. So, this is not a choice for me, but I will say I have made the most of it. I enjoy combing the internet and then making small changes to recipes to make them my own. I will keep the recipes coming for those of you who want to try new things. Enjoy! 💞

Tips
  • You do not have to ad salt if you are trying to omit salt from your diet.
