Hello to you all! Want to have a cookie? A nice almond flavored oatmeal cookies perhaps? There you go, have another one, I’ve made plenty. The other day I was craving something sweet, but in true January resolutions fashion I did not have anything sinful in my cupboards. But the the craving was pretty bad and for months now this particular memory of some childhood cookies had been bouncing around in my head. So I decided that this was gonna be the day. I was going to recreate the almond flavored oatmeal cookies I remembered.

Sadly my mom’s old cookbook from her finishing school days has somehow gotten lost in the move out of my former home. So I couldn’t search for the true recipe. I went for the next best alternative. Looked up various oatmeal cookie recipes, checked my stock of supplies and came up with a version that felt as if it could be the one my mom used. 

It did! The taste of these cookies was just as I remembered. They got the seal of approval of my taste tester too, so here I am to share them with you.




Disclaimer. I am a Euro baker so we use grams and measure everything precisely, especially when baking. I did my best to find the proper conversions to cups for the ingredients but use your own judgment or better yet a scale.

Everyone’s oven is different so again use your own experience and watch these babies carefully they are ready faster than you think.

Almond Flavored Oatmeal Cookies Recipe

Ingredients

  • 100 grams (half a cup) of soft butter
  • 200 grams of sugar (1 cup)
  • 2 eggs
  • 300 grams of flour (3 cups)
  • 200 grams (2.5 cups) of oatmeal
  • 2 tsp of baking powder
  • 1 tbs of almond extract
  • pinch of salt
Instructions

In a mixing bowl: Mix butter and sugar
Add eggs and almond extract
Add flour, oatmeal,salt and baking powder Mix to a consistent, sticky dough
Roll small balls and place on cookie sheet (no need to press them down)
Bake for about 15 min at 190C (374F) or until the edges start to brown.
