This is the perfect recipe when you want a tasty, homecooked meal but don't want to spend a lot of time in the kitchen.

It has been a very cold week up here with the temperatures falling to their lowest point of the year, and when that happens it means one thing for Eric and me, time to snuggle on the couch with some fuzzy blankets and our dog, Puck, and watch movies together. It is a cozy and enjoyable way to spend the day together when venturing outside is not something any of us wish to do. Once in a while, it is great to order food delivery when we get hungry, but usually, I prefer to cook, even if it is something simple, quick, and easy. I think there is something to be said for home-cooked food no matter how simple the meal is, and these pork chops can’t be beaten. It takes just minutes to prepare them (minus baking time), and it is one of our favorite ways to eat pork chops.

So I popped into the kitchen in between movies and started prepping the chops, taking a mere 15 minutes to get them ready to pop into the over while Eric took Puck outside.

Baked Pork Chops with Brown Sugar Garlic Glaze

  • 2 boneless 1″ pork chops
  • salt and pepper
  • 2 Tbsp olive oil ( you can use vegetable oil if you desire)
  • 3 Tbsp minced garlic
  • 4 Tbsp butter or margarine
  • 1 tsp red pepper flakes
  • 3 Tbsp brown sugar (you can substitute honey if you would like)

  1. Preheat your oven to 375 degrees.
  2. Season the pork chops with salt and pepper to taste.
  3. Heat the olive oil in a pan on medium-high heat. Sear your pork chops for about 3 minutes on each side. Remove from pan put into oven-safe baking dish.
  4. Reduce the heat of the skillet to medium-low and add in the minced garlic, butter, red pepper flakes, brown sugar. Mix until combined, then simmer for about 3 minutes.
  5. Pour glaze over pork chops and place into the oven to cook for about 20 to 25 minutes, or until the internal temperature reaches 145 degrees on a meat thermometer.
  6. Remove pork chops from the oven and let rest for 5 minutes.

Great Side Dishes for Glazed Pork Chops

Because I kept these so simple I kept the sides simple and easy as well. I popped some croissants into the oven to bake alongside the pork chops, and bonus, they cook at exactly the same temperature. I also steamed some fresh broccoli and topped that with just a smidge of parmesan cheese. If you look closely at the picture you can also see some jam by the croissants. That is my homemade plum jam. If you have never tried plum jam, you simply must try it at least once. It is amazing. You can find my recipe here.
