Chocolate and Toffee Cookies Made With Brown Sugar & Butter

My husband Eric is on a sweets kick right now, which is really weird since he is not normally a person who enjoys desserts at all, but after he ate all the leftover Christmas candy at our house he asked me to make cookies. Sure, I love baking and am completely up for that.


Mini Chocolate Chips and Toffee Bits


After I found this recipe he looked at it and said “I don’t think I will like those… I don’t like toffee very much.” “Oh” was my answer but all the while I was thinking “Hah! These sound amazing and I am making these.” So I did, and guys… these are amazing cookies. Even Mr. “I don’t like ANYTHING!” admitted they were really good cookies. He liked them so much, in fact, I didn’t think I was going to have any left to take pictures of. I guess I don’t have to worry about these getting stale.

Toffee Cookie Ingredients


2 C. Flour


1 tsp. baking soda


1/2 tsp. salt


1 Tbsp. corn starch


1 C. packed light brown sugar


14 Tbsp. butter, softened


1 egg


2 tsp. vanilla extract (homemade vanilla extract recipe)


1 C. toffee bits


1 C. mini chocolate chips


Mixing the Cookie Ingredients
  1. Preheat your oven to 350°
  2. Mix together flour, baking soda, salt, and cornstarch in a medium bowl.
  3. Beat softened butter in a KitchenAid stand mixer and brown sugar until light and fluffy.
  4. Add egg and vanilla.
  5. Add flour mixture to butter a 1/2 C. at a time until thoroughly combined.
  6. Add the toffee bits and mini chocolate chips and mix until well combined.
  7. Using a cookie scoop or a teaspoon place balls of dough on a cookie sheet covered with silicone baking sheets or parchment paper.
  8. Bake for 10-12 minutes or until edges just start to turn golden brown. Cookies will still be soft in the middle but will be done.
  9. Remove from the oven and let cool on the cookie sheet for a few minutes before transferring them onto a cooling rack.
  10. Store in an airtight container.

      I know, right? I made these they at mine blowing great next year I'm adding them into my rotation of cookies for Christmas but this year they are all mine lol
