It’s not officially spring yet, but it sure does feel like it! We’re gearing up for almost two straight weeks of spring like weather. Temps in the high fifties to low sixties with some rain here and there. Let me tell you, while we haven’t had any crazy cold weather or big snows (so far!) this year, I’m ready to enjoy the nice weather. I love spending time outdoors at festivals and events. And of course, hiking ranks pretty high on my list as well. My favorite thing to do during spring, however, is to entertain.


These bumblebee Oreo cookie truffles make an easy, no bake party dessert that both kids and adults will love digging into! They’re super fun to make. I chose to make my Oreo cookie truffles in the shape of bumblebees for this spring dessert recipe simply because I’ve always loved bees!


Bumblebees, in fact, are my most favorite bees ever. This is despite being stung on my earlobe by a black and white bumblebee as a child. They’re just so adorable and generally lazy, that I’ve never really been frightened of them — bee sting or not! Besides, who can resist all those cute photos online of bumblebee butts nestled inside flowers?

Bumblebee Oreo Cookie Truffles With Cream Cheese for Spring

Ingredients

  • 18 Oreo chocolate sandwich cookies
  • 4 oz. cream cheese, softened
  • 2-3 oz. Wilton Decorator Preferred black fondant
  • 1 ½ cup Wilton yellow candy melts
  • 48 miniature white chocolate chips
  • 48 Wilton candy eyeballs
Instructions

Line a baking sheet with wax paper or parchment paper. Set aside for later use.
Chop eighteen Oreo cookies into fine crumbs using the pulse feature on a food processor.
Combine the Oreo crumbs and cream cheese in a large bowl and mix together until thoroughly combined.
Roll out the Oreo mixture into twenty-four small ovals, about 1 ½ inches long and 1 inch wide and roughly the shape of a bumblebee. Set onto the lined baking sheet.
Refrigerate the Oreo cookie truffles for at least a half hour.
As the truffles chill, roll out black fondant until it’s about ¼ of an inch thick. Use a paring knife to cut the fondant into 48 small strips, about 2 inches long and ¼ of an inch wide.
Use the remaining fondant to roll out 24 bee stingers, about ¼ of an inch in size each.
Once the Oreo cookie truffles are chilled, remove them from the refrigerator. Set aside.
Place yellow candy melts into a microwave-safe bowl.
Microwave the candy melts in 30-second intervals, mixing in between each interval, until the candy has completely melted.
To assemble your bumblebee cookie truffles, dip ¾ of the first Oreo truffle into the melted yellow candy.
Remove and place back onto the lined baking sheet. Then add two strips of fondant to the dipped portion of the truffle.
Follow with two white chocolate chips in the center between the fondant for the bumblebee's wings.
Add a tiny fondant stinger onto the end of the truffle.
Then place a drop of melted candy onto the back of two of the candy eyes. Place the eyes onto the undipped portion of the truffle.
Repeat for each of your bumblebee Oreo cookie truffles until there are none left remaining.
Allow the bumblebee Oreo cookie truffles to set for at least 30 minutes before serving.
