Casseroles are somewhat new to me, I have only been making them for a relatively short time. When I got married, I just tried to replicate the dishes my Mom served us when I was growing up. I never took an interest in cooking or baking when I was growing up, so my Mom never really taught me how to make any of her dinners she used to make. Although, she did make us a lot of Hamburger Helper, that wasn't one of my favorite meals. Like many other families, money was always tight when I was growing up.

So, that's why I don't understand why my Mom didn't make us any casseroles. Casseroles are often used to make your grocery money stretch further. Serve a Casserole with a salad and dinners ready!
Chicken with Olive Oil and Ranch Dressing
It gets even better, you have minimal ingredients and minimal bowls or pans needed to make a casserole. Many times you will find that the recipe calls for only one bowl and/or casserole dish to make it in. Which makes clean up so much nicer.

Ingredients

  • 1 lb chicken breasts boneless and skinless, cut into bite size pieces
  • 2 tbsp olive oil
  • 3 tbsp ranch seasoning and salad dressing mix (1 packet or 1 oz)
  • 1 ½ cups white rice uncooked
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 8 slices bacon fried and chopped
  • 2 ½ cups chicken broth low sodium or no sodium added
  • ½ cup half and half
  • 2 cups cheddar cheese shredded
  • 2 tbsp parsley fresh, chopped
Instructions

Preheat your oven to 350 F degrees.
In a medium size bowl toss the chicken together with the olive oil and 2 tbsp of the ranch seasoning mix; set aside.
In a 9×13-inch casserole dish combine the rice, onion, garlic, half of the bacon, chicken broth, half and half and the remaining tbsp of ranch seasoning mix. Add the chicken and stir everything together.
Top with remaining bacon and cheddar cheese. Cover the casserole dish with aluminum foil and place in the oven. Bake for 30 minutes covered, then remove the foil and bake for an additional 30 minutes or until the rice is cooked through.
Garnish with parsley and serve.

    I fixed this last night & it was a hit!! I did add mixed vegetables in the dish but it turned out great! My mother-n-law really liked it ( that has to be a bonus!)
