Guys my mind is totally blown.


On my never-ending quest to find a replacement for potatoes (sigh), I’ve been exploring some other root vegetables.


Parsnips, turnips, and rutabaga have been some awesome substitutes, but OH MY GOODNESS, have I found the ultimate.


THE RADISH.


Now I know what you’re thinking, “Vic, radishes are super peppery, I’m not sure I’ll like it.”


Well, that’s where you’re wrong. Dummy!


When you roast the radish, it mutes the flavor significantly, letting the radish take on the flavor of whatever you’re cooking them in. Making them the PERFECT potato substitute.


And as we know, I LOVE roasting things, because it is quite literally the easiest cooking method out there.


Besides the crockpot, but like c’mon, there’s nothing better than a crockpot.

Preheat your oven to 450°.

Cut the ends off the radishes, then cut them in half, or in quarters if they’re large.


Vic Trick: The most important thing is that the size of the pieces are similar, so they cook evenly.


Toss them in a bowl with some olive oil, 3 cloves of minced garlic, 2 tbsp of grated parmesan, and a pinch of salt and pepper, then spread them onto a baking sheet.


Vic Trick: What’s our rule when roasting?! DO NOT OVERCROWD THE PAN. Then you won’t get that delicious crispiness.

Bake them for about 15 minutes, then toss them around and cook for another 10-15 minutes, depending on the size of your radishes. Stick them with a fork and if they go through smoothly, they’re done!

AND THAT IS LITERALLY IT!


Give them a taste and your mind will be BLOWN by how similar it tastes to a delicious roasted red potato. Goes perfectly with steak with Vic’s Tricks To…Creamy Blue Cheese Steak Sauce.

  • 1 bundle or bag of radishes
  • 3 garlic cloves, minced
  • 2 tbsp grated parmesan
  • 1 tbsp olive oil
  • Pinch of salt and pepper
Instructions
