I love me a quick and healthy side dish.


I don’t know about you guys, but I’m super happy just having a steak or marinated pork tenderloin for dinner. But, sometimes it’s hard to come up with simple easy side dishes.


I guess we’re supposed to have our greens and stuff…idk


Well, look no further, because this is probably the easiest and quickest side I’ve ever made.


All you need for this recipe is a bag of spinach, a jar of artichokes, lemon juice, garlic, salt & pepper.


And it’s as easy as pretty much combining them…


Heat some oil in a large pan, over medium heat, and add the bag of spinach. Cook until wilted. Drain the liquid from the jar of artichokes and then add them right into the pan. Add about 2 tbsp of lemon juice and 3 garlic cloves, minced, as well as a pinch of salt and pepper.


Cook until the artichokes are warmed and the juices thicken a bit, about 4 minutes.

AND THAT IS IT!!!!


I love this with fish, but would also go really well with an Italian herb chicken or pork tenderloin. Or a steak too!

Ingredients

  • 1 bag or bundle of spinach (can also use one package of frozen spinach, thawed)
  • 1 12 oz jar artichokes
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • Salt & pepper
Instructions
