Ingredients
For the crust
  • 2/3 of an Oreos Package
  • 4 Tbsp Butter, melted
For the cheesecake
  • 3 packages of cream cheese
  • 1/2 Cup Cocoa Powder
  • 1 Cup Sugar
  • 1/4 Tsp Salt
  • 1/4 Cup Heavy Cream
  • 5 Eggs
  • 1 Tsp of vanilla extract
  • 1 Bar of 70% Dark Chocolate, chopped and melted
Instructions
For the crust
Preheat the oven to 350.
Put the cookies in a food processor, separating them from the cream filling, and blend to make a fine crumb.
Mix in the melted butter and stir. Add more butter if needed to get a wet sand texture.
Line a 6" pan with parchment paper, I prefer a loose base for easy and clean removal.
Put the crust mixture into the bottom of the pan and use something flat to pat it firmly.
For the cheesecake
In a large bowl, mix cream cheese, cocoa, sugar, and salt.
Add the first 2 eggs, mix until smooth and then add the other 3 eggs mixing again.
Stir in the cream, yolks, melted chocolate, and vanilla extract.
Pour the filling into the pan and place in the oven.
Bake for 25 minutes and then lower the temperature to 250 and bake for another hour.
Turn off the oven and allow the cheesecake to slowly cool down for another hour.
Transfer to fridge for a few hours to fully cool before taking out and slicing.
