Strawberry Mint Protein Smoothie

I’ve come to find that there are two types of people when it comes to food – those who love breakfast, can’t get through the morning without it, and look forward to it every day. Then there’s the people who are indifferent about it, don’t like breakfast food, or would rather wait until lunch to eat. I am definitely a breakfast person. I love a good stack of pancakes or soft poached eggs over sourdough toast, but there’s not always enough time for an elaborate breakfast on a weekday. Growing up when I was running late, I would sometimes grab a granola bar on my way out the door and eat it on the bus to school. I noticed that on those days, I would always be hungry before lunch. Looking back, it’s no surprise as those things are full of sugar and pretty low in protein.

Later into high school and all through college, I discovered protein smoothies and started making them for a quick breakfast or snack. You can’t really go wrong when blending fruit, veggies, ice and liquid – so you can make them on the fly without a recipe. However, I have a few tried and true smoothie go-to recipes up my sleeve that taste consistent every time I make them. This Strawberry Mint Protein Smoothie is one of them, so naturally I am sharing it here!

This smoothie has just the right amount of fresh mint leaves, making it unique and refreshing. It’s also packed with strawberries, which are sweet, low in calories, and highly nutritious. To sneak some greens in, I added a handful of kale. For fiber, I added flax seed. I topped it all off with a scoop of my favorite strawberry protein powder, ice, and almond milk.

A healthy and hearty smoothie is the perfect way to start your day off on the right foot. Imagine making a healthy fruit and veggie packed delicious protein smoothie every morning and really making it part of your routine. As you make more and more smoothies, you can get creative with recipes and develop your own favorites. Your mind and body will thank you!

Ingredients

  • 1 cup fresh (or frozen) strawberries stems removed
  • 1 cup almond milk
  • 1/2 cup green kale or spinach
  • 6 leaves fresh mint
  • 2 TBS flax seed
  • 1-2 scoops your favorite protein powder I used Legion whey strawberry banana flavor
  • 1/2 cup ice
Instructions

Add all ingredients to a blender and blend until smooth. Serve immediately.
