Dirty Chai French Toast

Are you a coffee person or a tea person? What about both? I definitely like both, so I love the occasional dirty chai latte. If you’ve never tried a Dirty Chai, you should – it’s a hot (or iced) latte with chai spiced black tea, your milk of choice, and a shot of espresso added in. You can choose to add sweetener or flavored syrup, or just enjoy as is. It’s delicious because it combines the deep, bitter, rich flavors of espresso with the warm, sweet, spicy, peppery flavors of a chai spice blend.

One of my favorite breakfasts to make (and eat) all throughout my childhood was always french toast. My parents would let me mix the eggs, milk and vanilla together and then pull a chair up to the stove and help them flip it. It’s one of my favorite memories of weekend mornings! French Toast is still one of my favorites to this day because whenever I eat it, I think of home and it’s super comforting. I am always trying new takes on the original French Toast, and that’s where this Chai Spiced French Toast was born. The spices in this recipe are so fragrant, and between the spice blend and vanilla extract, your house will be left smelling sweet and inviting.

Another thing I love about French Toast is that it can be made more nutritious by swapping wheat or sprouted grain bread for more processed white bread. Fruit with a drizzle of honey can be used as a topper for the dish instead of tons of syrup, whipped cream and butter. This particular recipe has a chai coffee whipped butter element, but this can be omitted and replaced with fruit for a lighter breakfast.

The chai french toast itself is made with a short list of simple ingredients:


  • Milk of choice (2%, almond, coconut will all work)
  • Bread of choice – sourdough works great, as well as sprouted grain, brioche or whole wheat.
  • Vanilla extract
  • Eggs
  • Chai Spice

For the coffee element, this flavorful brunch dish is topped with homemade whipped coffee chai honey butter. The whipped butter is also made with very few simple ingredients:


  • Instant Coffee
  • Butter
  • Honey
  • Chai Spice

When making the honey butter, make sure to use an electric mixer (handheld or standing) to combine ingredients. It’s important to aerate the butter mixture so that it becomes light and fluffy. This makes it easy to spread and perfect for serving over french toast. I’ve found that the honey butter also tastes amazing on a toasted piece of plain sourdough. You can store the butter leftovers in the fridge for 3 weeks – 1 month.

Ingredients
French Toast
  • 4 eggs
  • 3/4 cup milk of choice
  • 1 TBS vanilla extract
  • 2 tsp chai spice blend
  • 6-8 slices of sourdough, wheat, or brioche bread
Whipped Dirty Chai Honey Butter
  • 1/2 cup butter, softened
  • 1 tsp chai spice
  • 1 tsp instant coffee granules
  • 2 TBS honey
Instructions

Beat Eggs in a medium bowl.
Add milk, vanilla, and chai spice and whisk until well combined. Transfer mixture to a shallow dish that will be easy to dip bread into.
Prep the honey butter. In the bowl of an electric mixer, add softened butter, chai spice, instant coffee, and honey and whip together until well combined and air has been incorporated into the butter, making it light and fluffy. Set aside.
Heat a medium-large nonstick pan over medium heat and add a few tsp of butter.
Dip 2 pieces of bread into the milk and egg mixture, allowing some of it to be absorbed by the bread. Make sure to coat both sides.
Transfer egg-dipped bread into pan. Cook for 2-3 minutes per side or until each side is golden brown.
Repeat with the rest of the bread, adding more butter to the pan each time.
Serve hot with a pat of Dirty Chai Whipped Honey Butter and fresh berries (optional).
