Healthy Coconut Curry Lentil Soup

Whether you're trying to eat a bit healthier, go vegan or eat gluten free, this soup checks all the boxes! It chock full of protein, fiber and nutrients from the lentils, sweet potatoes and spinach. Not to mention it packs a huge flavor punch from the ginger, coconut milk, curry powder and jalapeño. This soup is hearty and perfect for a chilly night!


It is super easy to throw together and takes less than 40 minutes total! I like to make a big batch on Sunday and pack it up in individual serving containers for lunch throughout the whole week!

Ingredients

  • 1½ cups red lentils
  • 2 cans coconut milk
  • 6 cups vegetable or chicken broth
  • 2 sweet potatoes diced
  • 4 cups spinach chopped
  • 2 tbsp oil
  • 1 onion diced
  • 1 jalapeño diced
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 3 tbsp curry powder
  • 1 cinnamon stick
  • salt and pepper to taste
  • cilantro for serving
  • lime wedges for serving
Instructions

Heat large pot or dutch oven over medium heat. Add oil. Sauté onion and jalapeño for 2-3 minutes until softened. Add ginger, garlic, curry powder, and cinnamon stick. Sauté for 1 minute.
Add coconut milk, broth, sweet potatoes and lentils. Simmer for 20 minutes. Add spinach and simmer for 5-10 minutes until spinach is wilted and lentils are cooked through. Season with salt and pepper to taste. Serve hot with cilantro and lime wedges.

    Sounds delicious and I want to make it. The trouble is I have a sister living with me who doesn't like anything 'hot'. How spicy does the jalapeno make the soup? I can maybe get away with a tiny bit.

      I would take out the seeds of the jalapeño if she doesn't like spicy or just leave it out entirely!

    Yummmm. Looks delicious! I would certainly want to halve this recipe when I make it, but the combination of ingredients looks yummy. I might omit, the cinnamon for myself, or not. Thanks for the recipe!
