Peachy Maple Smoothie

First thing’s first — historically, I'm the worst at making smoothies. Seriously, the WORST. I find recipes for these delicious concoctions full of healthy greens and veggies that supposedly taste like heaven, but when I try and make them they taste like kale soup blended up with yesterday’s garbage.


Happily, my smoothie barista-ing (that’s a word) luck changed when I found myself with a boatload of leftover peach slices. They were pretty bruised and yucky to look at, but still perfectly edible. Rather than waste them, I came up with this yummy Peachy Maple Smoothie recipe!

Admittedly, this is not one of those superfood smoothies that will check a million vitamin and mineral boxes, but it’s yummy and foolproof.

To start, grab a handful of peach slices, fresh or frozen. If you are starting with whole peaches, slice up one peach and use about three-quarters of it. Feel free to snack on the rest. Next, you’ll want to add some maple-flavored yogurt. I used my go-to Stonyfield Farms because that’s what I had on hand, but Brown Cow Cream Top is also divine.


I used a generous scoop that equaled about half the volume of the peaches. You could also use vanilla, honey, or even peach if you wanted it extra peachy, but maple is my jam. I also added a squirt of honey in there.


The last ingredient needed is some sort of liquid. You can adjust the amount to suit how thick or thin you want your smoothie to be. I always err on the side of less because you can always add more liquid to thin out the consistency, but you can’t go the other way. I used almond milk, but regular milk, soy milk, water, or even your favorite juice would work just as well. Give it a good whirl in your blender on the “liquefy” setting until you no longer see or hear any chunks flying by in there.

This part is clearly optional, but I had a block of maple sugar in my cabinet so I used a zester to grate a little dusting on top of my smoothie. You don’t have to stick to the theme though! Coconut flakes might be tasty, or an extra drizzle of maple syrup and honey on top. Whipped cream maybe? Let’s get a little bit extra with this one 😉

Ingredients

  • 1 scant cup of peach slices
  • 1/2 cup maple yogurt
  • 1/4 - 1/2 cup almond milk
  • Generous squirt of honey, optional
  • Maple sugar, optional
Instructions

Combine all ingredients through maple sugar in a blender
Blend on the liquefy setting until no chunks remain and the consistency is super smooth (about 30 seconds to a minute)
Pour into a glass and top with a dusting of maple sugar if desired
