Cake for breakfast? Well maybe not cake, but black forest chia parfait is healthy enough to stand in instead of your usual go-to.


But how exactly does it compare to the luxurious black forest cake?

Well, the "base" of the cake is the tastefully bitter and creamy cocoa chia pudding (adjust the amount of cocoa to your taste). The cream is replaced with yoghurt for a healthier twist, and the cherry factor is pumped up through the use of cherry jam (sweetness and acidity to complement the chocolate!) and chopped up cherries- the crux of any black forest cake, though instead of maraschino cherries, just use fresh ones!


Use the basic chia pudding recipe with cocoa powder, then layer it with mix cherry and vanilla yoghurt. This chia pudding parfait would be one of your favorite ever!

Ingredients
Basic cocoa chia pudding
  • 3 tbsp chia seeds
  • 1 cup oatmilk or any milk you prefer
  • 1 tbsp agave syrup or honey
  • 2 tbsp good quality cocoa powder
Cherry mix and yogurt layer
  • 50 grams fresh cherries, chop into small pieces or you can use 50 grams of canned black cherries in heavy syrup
  • 2 tablespoons of cherry spread or jam
  • 8 tbsp vanilla yogurt
Instructions
Chia seed pudding
Mix all ingredients for chia pudding and let it rest in the fridge in an airtight container for at least 2 hours.
Cherry mix, combine the two ingredients and let it rest for about 5 minutes before assembly
First layer is the cocoa chia pudding, then yoghurt and mixed cherries. Sprinkle with shaved block chocolate on top (this is optional)
