I only recently discovered eating brussels sprouts raw and now I'm hooked!! Here's my current fave salad and dressing recipe.

Ingredients

  • 1 cup of lemon juice
  • 1 tbsp Country Dijon Mustard
  • 1 tbsp garlic
  • Sprinkle of pepper
  • 1 tsp salt
  • 1/4 cup of olive oil
  • 3/4 lb. brussels sprouts
  • Dried cranberries
  • Chopped walnuts
  • 1/2 apple
Instructions

Thinly slice your brussels sprouts and chop your apples into bite-sized pieces.
In a small bowl, mix the lemon juice, mustard, garlic, salt, pepper. Once combined, slowly add oil while whisking.
In a salad bowl, combine brussels sprouts, apples, walnuts, and cranberries. Toss in your dressing and enjoy!
