I don't know if anyone else loves dips as much as I do, but I'm usually using veggies or bread as the vessel for the dips icon


I wanted to use some avocados I had that were about to turn and make them into a dip. I decided to whip the avocados with some olive oil and turn them into a lightened mousse-like texture.


Of course I couldn't stop there. I also whipped steamed carrots and beets into their own tasty dips as well. The toppings were fun to add to these as well. The dill and sharp radishes complemented the sweet carrots, while goat cheese and toasted pistachios were tasty on the beet dip. Naturally, I went with red onion and cilantro for the avocado dip.


Serve these with grainy crackers or nutty bread for the best tasting experience!

Ingredients
Carrot Mousse
  • 1/2 pound peeled and diced carrots
  • sliced radishes for topping
  • fresh dill for topping
  • 1.5 Tbsp EVOO
  • sea salt for taste
Beet Mousse
  • 5-6 medium beets, peeled and diced
  • 1.5 Tbsp EVOO
  • crumbled goat cheese for topping
  • toasted crushed pistachios for topping
  • sea salt for taste
Avocado Mousse
  • 2-3 medium avocados, peeled
  • 1.5 Tbsp EVOO
  • 1/4 diced red onion for topping
  • fresh cilantro for topping
  • sea salt for taste
Instructions
Carrot Mousse
Boil pot of salted water. Peel and dice carrots
Add carrots and bring to a boil. Reduce heat and simmer uncovered for 15-20 minutes until carrots are fork-tender. While boiling, slice radishes and prepare dill.
Drain water and add carrots to food processor. Slowly add oil and blend until creamy.
Plate and top with desired garnishes!
Beet Mousse
Boil pot of salted water. Peel and dice beets.
Add beets and bring to a boil. Reduce heat and simmer uncovered for 10-15 minutes until beets are fork-tender. While boiling, chop pistachios and crumble goat cheese.
Drain water and add beets to food processor. Slowly add olive oil and blend until creamy.
Plate and top with desired garnishes!
Avocado Mousse
Peel avocados and and place in food processor. Dice red onions and cilantro.
Slowly add olive oil and blend until creamy and texture appears light, about 5-9 minutes.
Plate and top with desired garnishes!
Tips
  • Be creative and think of other veggies you could use. Maybe roasted red pepper? Zucchini? Go for a baba ganoush taste with eggplant?
  • Use high-quality EVOO for optimal taste
  • If you would like to have dips hold a certain shape, you can also pipe them through a piping bag with tip to control the style of plating.
