Teriyaki Salmon Wrapped Bean Sprouts

Scrumptious, adorable and unique, Japanese bean sprouts (you can easily replace with something else) wrapped in teriyaki salmon is great as an appetizer, a side dish, or as a light meal!

The vegetable that is being wrapped is your choice; blanched asparagus pairs well, you could also use spring onions or french beans too.

There's no need to buy any pre-made teriyaki sauce, you'll find the super simple recipe below. In this recipe the dish is served with steamed sweet potatoes and cauliflower, but it's totally up to you if you would prefer to have it with white rice, potatoes, broccoli, sugar snap peas, or anything else.

Ingredients
Teriyaki Sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 2 tbsp Japanese soy
  • 1 tbsp brown sugar

  • 200 grams salmon fillet
  • 100 grams bean sprouts or asparagus
  • 120 grams steamed sweet potatoes
  • 100 grams steamed cauliflower
  • Cherry tomatoes
Instructions

Thinly slice the salmon fillet and wrap it around the sprouts or vegetable of choice.
In a medium frying pan add the mirin, sake, soy and sugar. Cook over low heat for about 1 minute then add the sprouts wrappped in salmon. Cook over medium heat for about 2 minutes each side.
Serve with sliced steamed sweet potatoes, cauliflower and tomatoes.
