The theme of this month is quick meals that require minimal equipment, ingredients, and time.


The last recipe in this series is a breakfast oat bake, because we all love them, don't we? They don't take that long to make, they're absolutely delicious, and they make a few days worth of breakfast at once. What's there not to like? This oat bake is made with bananas, apple, cocoa powder, and oat milk...did I mention it's vegan? To make it even nicer I recommend topping it up with some vegan yoghurt and frozen berries. Or maybe vegan ice cream? Who's to say you can't have ice cream for breakfast?

Ingredients

  • 1 mashed banana
  • 1 apple, grated or cubed
  • 80-100g (1 1/4 - 1 1/2 cup) oats
  • 200ml (3/4 cup) oat milk
  • 2tbsp cocoa powder
  • 2tsp baking powder
  • vegan yoghurt and frozen berries on top
Instructions

Preheat the oven to 180 celsius (356 fahrenheit)
In a large bowl, mix all the ingredients together and transfer to a 25x20cm (10x8in) non-stick baking tray (alternatively just mix it all already in the tray to avoid doing the dishes)
Bake for 30 minutes
Serve with yoghurt and frozen berries or ice cream
