Crispy Chicken Parmesan

Chicken parm is one of my favourite go to meals - it's fairly easy to make and beyond delicious! With a rich vegetable-filled sauce and crispy coating, this will become one of your family favourites too! I like to use a jarred pasta sauce to save on time but add in a ton of vegetables and garlic for extra flavour. A quick pan fry is all you need to get this chicken moist and crispy - yummy! Top with melty mozzarella cheese and serve it up with spaghetti noodles and steamed vegetables for an easy weeknight meal. Delicious, right? Enjoy my take on this classic Italian dish.

Ingredients
For the tomato sauce
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1/2 zucchini, diced
  • 1 Tbsp Italian seasoning
  • 1 tsp each salt and pepper
  • 1 jar of your favourite pasta sauce
  • 1 cup chicken broth
For the crispy chicken parmesan
  • 4 large chicken breasts, slice in half
  • 1 cup flour
  • 1 Tbsp Italian seasoning
  • 2 large eggs, beaten
  • 1 cup Italian breadcrumbs
  • 4 Tbsp butter
  • 1 cup shredded mozzarella cheese
Instructions
For the sauce
In a medium sauce pan, saute garlic in the olive oil over medium heat for 3-4 minutes.
Once tender, add in all of the diced vegetables. Saute until tender crisp over medium heat, abut 7-8 minutes.
Add in seasonings, pasta sauce and chicken broth and give everything a stir. Heat until warm and bubbly then set aside.
For the crispy chicken parmesan
Preheat oven to 375. To a large 9 x 13 casserole dish, add in enough of your prepared tomato sauce to lightly cover the bottom of the dish. Set aside.
Place sliced chicken breasts on large cutting board. Using a meat mallet or rolling pin, pound chicken breasts until the are about 1 inch in thickness. This helps for even cooking and tenderizes the meat.
To 3 large bowls add flour and Italian seasoning to one, eggs to another and bread crumbs to the last bowl. Begin by placing chicken breasts one at a time first in the flour mixture, then in the egg and next in the bread crumbs. Press the bread crumbs onto the chicken to ensure it is entirely coated.
Once all the chicken has been coated, heat butter in a large frying pan over medium high heat. Add chicken breasts in single layer to frying pan and cook 3-4 minutes per side until golden brown. Place in prepared casserole dish.
Once chicken has been fried and is in the casserole dish, top with remaining tomato sauce and shredded cheese. Bake for 20 minutes until chicken is baked through and cheese is melted.
Serve with pasta noodles and enjoy!
