Banana bread baked oats! A very common question I get is "what is a healthy breakfast alternative that doesn't take up too much time & is inexpensive?" This is the recipe I give them, every. single. time. I have been making this for years & now my entire family makes it as well. The best thing about this recipe is that it is SO VERSATILE. You can add berries, nuts, caramel, pumpkin, etc. I've made a lot of different versions of this baked oats recipe but the classic banana chocolate chip is still my favorite!


Nutrition: oats are one of my favorite foods to start the morning with because they are high in fiber and are a slow digesting carbohydrate. Oats are a whole grain food (aim for at least 50% of your daily grains to be whole grain). Oats are insanely nutrient dense as they are packed with vitamins, minerals, and antioxidants. They are also incredibly versatile!

Ingredients

  • 2 cups rolled oats
  • 2 eggs
  • 1/4 cup maple syrup
  • 3/4 cup milk
  • 1/4 cup coconut oil
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2-3 spotty bananas
  • 1/2 cup chocolate chips
  • 1/2 tsp baking powder
Instructions

Preheat oven to 350
Take a fork and mash the spotty bananas into a medium mixing bowl
Mash well until a smooth consistency
Add coconut oil, maple syrup, eggs, and milk. Mix well.
Pour in 2 cups rolled oats, chocolate chips, baking powder, salt, and cinnamon. Mix well
Place in baking dish (recommended 9x9 square pan) and bake in oven for 20-25 minutes.
Tips
  • This is a very versatile recipe! You can add blueberries, apples, yogurt, etc. to make it your own. Feel free to experiment.
  • Substitute maple syrup for honey and/or apple sauce for eggs.
  • If using steel cut oats, add 1/8 cup more milk or 1 more mashed banana to ensure it does not come out too dry.
