Hearty Bison Chili Bowl for the Win!

Fall is here, weather is getting cooler, and hearty comforting meals are on my weeknight dinner menu.


One of my family's favorite cold weather dinner is Chili. I typically make Chili with ground beef, but this time we choose a more leaner meat and heart healthy like bison (also knows as buffalo). This is a very simple and easy recipe and it cooks in about 35 minutes.


I used some of my favorite spices to season this meat, like smoked paprika, California chili powder, cumin and a touch of cinnamon to balance all the flavors.


I like to sear the meat first, before I add the other ingredients, so it will slowly simmer and cook until tender in my dutch oven pot. Once you open the lid, you will find a velvety, delicious and aromatic chili.



Serve in a bowl, add your favorite toppings and I will assure you, there will be no leftovers.

Bison Chili

A comforting bowl of bison chili topped with sharp cheddar cheese, onions, cilantro and a dollop of vegan sour cream. I served it with a side of gluten and grain free chips. I recommend the Siete tortilla chips or the Trader Joe's Cassava and Coconut Chips.

Now, simply add your favorite toppings. I like fresh cilantro, white onions, shredded cheese and trying a vegan sour cream to balance all the flavors. Just delish !

Ingredients
Bison Chili
  • 1 lb of lean bison stew meat, trimmed and cut in small pieces
  • 1 can of organic crushed tomatoes (low sodium)
  • 1 can of organic mixed beans
  • 1 clove of garlic
  • 1/2 cup of chopped white onion
  • Spices:
  • 1 tsp of smoked paprika
  • 1 tsp of chili powder
  • 1/2 tsp of cumin
  • 1/2 tsp of pink himalayan sea salt
  • 1/2 tsp of black pepper
  • 1/4 tsp of organic ground cinnamon
  • 1 cup of veggie broth
Toppings:
  • fresh cilantro
  • shredded sharp cheddar cheese
  • sour cream
  • white onions
Instructions

First, cut the bison stew meat into smaller size pieces. about 1/4 inch so they will cook faster.
Prep all all you ingredients and toppings, like the onions, garlic, cilantro, cheese and set aside.
In a hot dutch oven pot, drizzle about 1 tbsp of avocado oil and lightly brown the onions and remove from heat. Then mix all the seasonings with the bison meat.
In the same pan, brown the seasoned bison meat for about 5 minutes. Then add the onions back to the pot, minced garlic, the crushed tomatoes, the beans and the broth (you may substitute for a 3/4 cup of water.) Cover with the lid and let it simmer for about 30 minutes or until the meats is tender. You may want to check the chili and stir occasionally to make sure it is not sticking to the bottom of the pot or there is no liquid. You may want to about 2 - 4 tbsp of water to thin it out.
It is ready to serve! Add your favorite toppings and side of chips or corn bread. Enjoy!
Tips
  • - You may add jalapenos for toppings for a kick - Like to serve it with grain and gluten free chips. My favorite are the Siete tortilla chips or the Trader Joe's Cassava and coconut chips
