Chia - Hemp Seed Pudding

Chia Hemp Seed Pudding is the perfect meal prep snack or breakfast!! It is packed with plant power in every bite and can be super versatile in flavor based on toppings and it comes together in minutes and no cooking required!


I made my recipe into two snack portions topped with blueberries and natural almond butter and the other got a tropical twist with mango and coconut. Really, the possibilities are endless! I hope you give this a try!

What you'll need:

>>tightly sealed containers

>>coconut milk

>>almond milk

>>chia seeds

>>hemp seeds

>>vanilla

>>Cinnamon (optional)

>>toppings of choice


***You can also use all almond milk or all coconut milk-- or completely swap out for milk of your choice but I love the combination of the two and the higher fat content from the coconut milk makes this even creamier!

Let your ingredients sit for five minutes and then give them a shake and they are ready for the fridge!

Add your favorite toppings after the mixture has thickened to its pudding consistency!

Ingredients
Chia - Hemp Seed Pudding
  • 1/2 cup coconut milk
  • 1/2 cup almond milk
  • 2 tbsp + 1 tsp chia seeds
  • 2 tbsp hemp seeds
  • 1 tsp vanilla
  • sprinkle of cinnamon (optional)
Toppings
  • Coconut Flakes
  • Fresh Fruit - Berries, Banana, Kiwi
  • Cacano Nibs
  • Nut Butter
Instructions

Mix all your chia-hemp seed pudding ingredients together either in one tupperware/mason jar or prepare in two jars.
Mix all the ingredients together and let it sit for five minutes.
After five minutes you'll notice the chia seeds have settled to the bottom a bit. Give the jar another good shake or stir.
Place your mixture in the fridge for at least one hour and enjoy with your favorite toppings!
Tips
  • This can be prepared ahead of time and will last a week in the fridge!
  • Feel free to use all almond milk if you do not like coconut milk it just might not be as creamy.
  • If you like your chia seed pudding sweeter, adding 1 tsp of honey or maple syrup should do the trick.
