A good bowl of chili just screams fall to me. Fall is definitely my favorite season, partially because of all of the warm cozy comfort foods that come along with it. This recipe is perfect because you can prep it all ahead, throw it in the slow cooker and let it cook all day while you enjoy some crisp fall air outside, or have it ready to go after a day at work. I love using my slow cooker during the colder seasons. There is just something so comforting about having your home filled with delicious smells and it just adds that extra element of coziness. My chili recipe makes enough to feed a crowd and can be adjusted to suit everyone’s palate. Enjoy!

With just a few simple ingredients and a little bit of patience you will soon be enjoying an incredible and delicious bowl of chili!

I personally like to sauté the onions and peppers before adding them to the crockpot as I enjoy the slightly caramelized and smoky flavor they add to the chili.

After several hours in the slow cooker your chili should look just like this.

I love to top mine with a good size dollop of sour cream and some freshly shredded cheddar cheese.

And don’t forget some tortilla chips to scoop up some of that delicious goodness. You can also break some chips up and add it in your chili for some extra crunch!

Ingredients
For the chili
  • 1.5lbs lean ground beef
  • 1 large red onion
  • 1 green pepper
  • 1 red pepper
  • 1 cup frozen corn
  • 1 can red kidney beans
  • 1 can black beans
  • 1 can maple beans
  • 1large can crushed tomatoes
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • Salt and pepper to taste
Toppings
  • Sour cream
  • Shredded Cheddar Cheese
Instructions

Cook the ground beef in a frying pan, drain and add it to the slow cooker.
In the same frying pan sauté the onions and peppers. Once soft add them to the slow cooker.
Add the remaining chili ingredients to the slow cooker and give them a good stir.
Cover and cook on low for 6 hours or high for 4 hours.
Once fully cooked serve in a bowl and top with your favorite toppings.
Tips
  • My family prefers chili with very minimal spice, if you like it spicy be sure to add some hot peppers or a spicy chili mix before cooking.
  • I find that if I don’t sauté the onions beforehand the chili has a very overpowering onion flavor.
  • I do not rinse or drain the beans before adding them to the chili.
  • I always try to use the low sodium beans in my chili.

      There are different varieties of "baked beans/pork & beans" that make them flavored with maple syrup &/or seasonings.

      It's very tasty with a bit of earthy sweetness that I think would be a great addition to this chili recipe.

      They are a variety of canned baked beans flavored with maple syrup. They might only be a Canadian thing… I hope this helps 😊
