Grilled Corn Guacamole

I love to eat good and healthy food... yes, you can do both! I also like things to be simple and quick, which can get tricky when you don't want to go straight to junk food. This is a recipe that is simple to throw together and is healthy. The great thing about avocados is that they are a great source of vitamins C, K, E, and B-6, as well as niacin, riboflavin, potassium, magnesium, and folate! While most of the calories come from fat, this is healthy fat your body needs to function. Wait!! There's more!!! They have been found to aid in digestion, protection against some cancers, and even decreasing your risk of depression! So they're not just cute and trendy, they have great nutritional value.

What you'll need:


2 avocados

2 tablespoons lime juice (or adjust for taste)

2 tablespoons cilantro (or adjust for taste)

Salt and pepper

Frozen sweet white corn

Cheese (I recommend Supremo Queso Fresco or chojito cheese)

For this recipe, I am using two avocados. If you want to make a larger batch, you'll want to adjust the rest of the ingredients. To start, you'll want to remove the avocado skin/rind and seed. Then add a couple tablespoons of freshly-squeezed lime juice. You could add more or less depending on your preference. I don't mind a strong lime flavor. The other benefit is the citric acid in lime juice is an antioxidant that will help the guacamole keep it's fresh, green appearance (not turn brown as quickly).

Next, chop some cilantro to add to taste. I like to use about two tablespoons, but you can add more or less depending on how strong of a cilantro flavor you enjoy. In this step you can also add salt and pepper if you'd like, about a teaspoon should do.

While you are mashing those ingredients together, you can throw about a half-cup of frozen sweet white corn in a pan with some oil to warm and slightly brown it. This should only take a few minutes so keep an eye on it. Once it has browned to your liking, remove from heat.

Now add the corn and mix it in.

I also like to add a little cheese. You can either mix it right in, or sprinkle on the top.
