Morning Toast TWO Ways

I don't know about you but I love Breakfast! It's the most important meal after all icon

I like to make toast but keep it interesting! So I have two go to recipes, Lox and cream cheese and Avocado Toast.

For the lox toast, I like to use 8 grain toast (you know, keep it healthy), 1/3 fat cream cheese, cucumber and lox (5 pts on Weight Watchers)

First peel and slice the cucumber while you toast the bread.


Then spread the cream cheese, I like doing it when the toast is warm so that it gets a little melty!

Then layer the cucumbers on top.

Finally add the lox for a crunchy, healthy, crispy, delicious morning breakfast!

My second go to is my take on avocado toast. (6 pts on Weight Watchers)

I use 1/2 and avocado and dice it while the bread is toasting. Again I prefer the 9 grain or something to that effect.

Then I scoop out the avocado and smash it on to the toast with a spoon.

I grind some salt and pepper to taste.

Meanwhile, I am also soft boiling some eggs. I put them in a small pot in water on high heat until it begins to boil then I cook for 1 minute.

Once they are done, I peel and place on top.

Now for the best PART! Cut the egg and let the yolk smother your toast icon

Ingredients
Lox Toast
  • 1 slice Toast
  • Small Cucumber or 1/4 of large
  • 2 pieces Lox
  • 1 tbsp Cream Cheese
Avocado Toast
  • 1 slice Toast
  • 1/2 an avocado
  • 1 soft boiled egg
  • salt and pepper to taste
Instructions
Lost Toast
Toast high grain bread until golden
meanwhile, slice small cucumber
spread 1/3 fat Philadelphia cream cheese over toasted bread
layer with sliced cucumber and top with lox
Avocado Toast
soft boil egg for 1 minute after boiling
Toast high grain bread until golden
smash 1/2 an avocado on toast bread
peel and place egg on top then cut it half and enjoy

    I do something similar... I usually put regular cream cheese, a few thin fillets of smoked salmon topped off with a sprinkle of green onions.
