Sweet Potato and Lentil Salad

Here is the recipe for one of my go-to meals. This salad is actually super filling thanks to the sweet potatoes and lentils! It is also healthy as it is rich in protein, iron, fiber, and more.


It is best to cook the potatoes and lentils in advance because then you can quickly throw this salad together. Also it is important to let them cool down after cooking, otherwise the salad becomes a mushy mess. I prefer to make my sweet potatoes using an air-fryer because it cuts the cooking time in half, but they can also be cooked in an oven if you do not own one.

Ingredients

  • 1 sweet potato
  • 1 cup lentils
  • 1 container or bag of arugula
  • 1 red onion
  • goat cheese to crumble on top
  • balsamic vinegar dressing or glaze
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 3 cups of water
Instructions
For the sweet potatoes
Peel and dice the sweet potato
Preheat air fryer to 400 F
Add the diced potato to the fryer basket and spray with olive oil
Season with salt, pepper, thyme, and rosemary
Air fry for 10 minutes, shaking the basket halfway
Make sure they are tender when pierced with a fork, then place in the fridge to cool down
For the lentils
Bring 3 cups of water to a boil and add 1 cup of rinsed lentils
Place a lid on the pot and reduce to a simmer
Cook for approximately 25 minutes, stirring occasionally, until the liquid is absorbed and lentils are soft
Let cool in the fridge
For the salad
Combine the arugula, sliced red onion, goat cheese, cooled potatoes, cooled lentils, and balsamic in a bowl
Toss then season with salt and pepper to serve
Tips
  • If you don't own an air fryer, cook the potatoes on a sheet in the oven at 425 F for approximately 30 minutes, turning halfway
  • Use vegetable or chicken stock instead of water to cook the lentils to add extra flavor
