What is better than a 10 minute homemade delicious pesto? What makes this basil pesto so bold and mouth watering is definitely the sun dried tomatoes. They are a must have, along with the fresh mozzarella. This recipe screams fresh from the basil, garlic cloves, mozzarella to the cilantro all blended together on top of a sliced toasted sourdough baguette. I prefer my bread toasted because I think that crunch gives it something extra and better texture. I have tried this recipe with Brie cheese as well and it is just as good, but I am a fresh mozzarella lover at heart. Try it yourself and enjoy.

Ingredients

  • 1/3 cup olive oil
  • 1/2 cup fresh cilantro
  • 2 cups fresh basil
  • 1 Tbsp minced garlic or 3 cloves
  • 2 Tsp spicy tomato paste
  • 1 Tsp salt
  • 3 slices of fresh mozzarella
  • 1 Package sun dried tomatoes
Instructions

Mix all ingredients into a blender.
Serve on top of toasted sourdough baguette or non toasted.
Tips
  • Brie cheese is a good alternative to use if you prefer over fresh mozzarella.
