Easy Black Bean Soup

Okay, please don’t let the title scare you. I am not always a “bean soup” fan but this one I truly love and the best part is that it is SO easy!!! One of the other great parts – it is inexpensive to make! You can see more of my crazy creations here

You will need the following ingredients:3 Cans Black Beans – un-drained1 can chicken broth1 16 oz jar of salsa of your choice2 Tbsp. lime juice1/2 c. sour cream1 Tbsp. cuminRed Pepper – optional

Place 2 cans of black beans and 1 can of chicken broth in blender, and blend until smooth.

Pour mixture into slow cooker and add last can of black beans into the mixture. Add your jar of salsa, 1/2 cup sour cream, and 2 Tbsp. lime juice and mix in. Add in your cumin and optional red pepper. Stir, put lid on, and cook on low for 8 hours (preferred) or high for 4 hours. The longer you cook the more flavor and spiciness comes out.

Ingredients

Instructions

Tips
