Who doesn't love avocado toast ! I could eat avocado toast everyday, for breakfast or a quick snack. You can have it with avocado alone or add cheese, egg, bacon, tomatoes, jelly you name it. Below features sliced avocado, fresh mozzarella, cherry tomatoes and a poached to top it off ! Have your avocado sliced, mashed up or mix and match as featured down below. It's my favorite to have it on toasted sourdough bread, but other days I find myself wanting to be healthy and choose toasted wheat bread. Adding a little zest is always a tasty twist when it comes to adding lemon zest drizzled over. Enjoy !

Ingredients

  • Toasted Sourdough sliced bread
  • Avocado
  • Sliced Fresh Mozzarella
  • Two Poached Eggs
  • Cherry tomatoes
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tbsp Butter
  • 1 Tbsp white vinegar
Instructions
Poaching the egg.
Pour cold water into medium saucepan, about three inches from the bottom.
Add 1 tsp salt .
Add 1 Tbsp white vinegar.
Bring to boil.
Crack your egg into simmering/boiling water, cook for 4 minutes.
Take out with spoon.
