If you think you can't make bread - you are wrong. I know bread can easily scare people. I was intimidated myself. Most people think they can't make bread without a bread maker or they have to spend their whole day making one loaf and that it isn't worth their time. Not only do you not need a bread maker but it does not take half the day to make.


I have been making bread weekly for the past 3 years. I make three loaves a week. I learned a few tips and tricks from my very talented bread making friends that have helped me with perfecting my loaves. I am going to share those few tips and tricks with you so you can get it perfect the first time!


I have not purchased store bought bread in years. The one time I did purchase bread, my kids would not eat it and neither would I. Our family has become spoiled, bread snobs! You will not eat store bought bread either once you start making your own.


You won't even need an air freshener plugged in anymore because the aroma of fresh baked bread smells so divine!


My kids request my bread every morning for breakfast, mid day snacks with butter and jam, cinnamon and sugar toast, sandwiches, for french toast, etc! Even a slice of bread with nutella smeared on it tastes just like a fresh baked donut from the bakery!


Is your mouth watering for a slice yet? Well, let me show you step by step how to make this...

This bread is so light, airy, chewy, and mouthwatering!!!

First off, to save you time on multiple risings that dough can go through this yeast will cut out an extra hour of rise time. I'll explain how in just a second.

The steps are as easy as "1, 2, 3, 4" Here is how I remember it: Add in 1/3 C honey Add 2 TBSP Yeast (prefer Saf instant yeast) Add 3 C warm water Add 4 C Bread flourI had a Kitchen-aid for 18+ years and I loved it (or so I thought) just because it was all I knew. I got this Bosch mixer and I tell you this is true love! The Bosch is a bigger bowl so it can handle all this dough and it doesn't spit out the flour off the sides of the bowl like my Kitchen-Aid did. Anyway, mix your 4 ingredients with your dough hook attachment until it is combined for a couple minutes and let it rise for maybe 20 minutes

While your dough is resting/rising in the mixing bowl get your other ingredients measured out. You will need:1/3 C Honey1/4 C Oil (canola, avacado, or vegatable) or Melted Butter1 TBSP salt3 C Bread FlourOnce your dough has risen a little, add all the above ingredients and mix until the dough pulls from the sides of the bowl. Let your hook knead the dough and when it is all combined then feel the dough to make sure it is not sticky on your fingers. If it is too sticky, add 1 TBPS of flour until it feels like soft play-doh but with a slight stickier feeling than play-doh. Add too much flour will make your bread dense and dry.

This is where you can skip the next rising step if you use the SAF instant yeast...if you use regular instant yeast then you will need to transfer your dough to a greased bowl and cover and let your dough rise until doubled (about an hour).If you used the SAF instant yeast then it is time to roll out into loaves to let rise in the loaf pans.Cut the dough into thirds.

Take each dough section and start to fold the edges into the middle and form a loaf. Slam the dough down after you have rolled up the middle to get the air bubbles out.

Gather in the edges to the center as you shape a loaf and slam out the air bubbles on the counter at least three times. Get your aggression out! This is the best part of making the bread!

Roll out your three loaves using the same process of folding in the center, shaping the loaf, then slamming it on the counter a couple of times to release the air pockets. Be sure to grease your pans before putting in your dough to rise or it will stick to the bottom.

After you covered your loaves with a dish towel, let it rise for about an hour. Preheat your oven to 350

Bake at 350 degrees for 30 minutes. Remove from oven and immediately take out of pans to cool on a rack and brush on butter on the top.

It is so good!!

Ingredients

  • 2/3 C Honey divided (1/3 C reserved for later in the process)
  • 3 C Warm Water
  • 2 TBPS Saf instant yeast
  • 7 C. Bread Flour
  • 1 TBPS Salt
  • 1/4 Oil or melted butter
Instructions

Combine 1/3 C honey, water, yeast and 4 C of flour. Mix until combined and let rest for 20 minutes.
Add 1 TBPS salt, 1/3 C Honey, 1/4 C oil or melted butter, and 3 C remaining bread flour. Mix until dough pulls from the sides of the pan and knead with the dough hook for 5 minutes.
If you are using regular yeast, then you will need to grease a bowl and let the dough rise again for an hour then punch down before rolling out into loaves. If using SAF instant yeast then cut into thirds and continue to fold in the center until dough get smooth and then slam onto counter three times to get air bubbles out before shaping into a loaf and putting them into greased bread pans.
Cover your loaves with a dish towel and let rise an hour
Bake at 350 degree for 30 minutes
When you remove from the oven immediately take out of bread pans and cool on a rack. Spread butter on the top of the loaves and let it melt while they cool.
Once the loaves have fully cooled, slice and enjoy!!!

    Can u half this bread recipe? We r just 2 elderly people & this is a lot of bread for us.

      Yes, you can halve the recipe. - The only difficulty is the honey which has to have half saved for later use. Half of one third cup is 1/6 cup. 16/6 is 2 and 2/3 Tablespoons. That is 2 Tablespoons plus 2 teaspoons.


      I would suggest using 8 x 4 inch pans (2). It appears she is using 9 x 5 inch pans (3). That would give you 2 smaller loaves. You could freeze 1 and use 1. You could also give one as a gift to someone. If the pans are too big, you would end up with loaves that are not as high.

    What if I don't own a mixer? Will please give instructions for just hand on? Also, is it okay to halve this recipe?

      Growing up, I was taught to mix by hand.


      Simply mix with a wooden spoon. When the recipe says to knead with a dough hook, simply knead by hand. You can knead in the bowl but it may be easier to knead it on you table or counter. Just sprinkle some flour on the table first.


      Basically, just follow the directions she gave in the recipe but use a spoon to mix and knead by hand.


      In regard to halving the recipe, I just answered that above. Yes, it can be halved. The honey is a little hard to halve because the number of tablespoons in a cup is not divisible evenly by 3. When you need to halve the honey quantity, just use 2 Tablespoons plus 2 teaspoons for each half in steps 1 and 2.


      I suggest using 2 pans that are 8 x 4 inches. It looks like she used 3 pans that are 9 x 5 inches.
