I’ve been all into cobblers and peaches lately, so I had to make this.

Ingredients
For the cookie🍪:
  • 2 cup (spelt) flour
  • 1 1/2 stick of butter
  • 1 1/2 Tbsp. baking powder
  • pinch of salt
  • 200 ml buttermilk
For the peaches🍑
  • as many peaches as you have (save a couple for decorating)
  • 3 Tbsp. brown sugar
  • 1 Tbsp. vanilla sugar
  • min. 3 shots of Baileys
For the crumble
  • 3 Tbsp. (spelt) flour
  • 6 Tbsp. of oats
  • 1/2 stick of butter
For decorating
  • cinnamon + brown sugar
  • pistachio ice cream
  • fresh peaches/apricots
Instructions

Preheat oven to 200C/400F. For the cookie using at first a standing mixer mix all the ingredients. Then knead the dough into a ball. On a clean surface roll out the dough into a 1-2 cm rectangle. Using a circle cookie cutter cut the dough into biscuits.
Toss together the peaches with all the other ingredients, place them into the bottom of a sheet (i used a pie plate). Arrange the biscuits on top.
For the crumble mix together the ingredients using you fingers. Sprinkle all over together with the cinnamon sugar.
Bake for 40 minutes. Decorate with some fresh fruit and ice cream.
