Easy Pumpkin Spice Muffins – With Extras

I have had this recipe for so long that I can’t remember who passed it to me. I am so excited to share it with all of you and I’ll give you all our little secrets to go along with it. These pumpkin spice muffins are SO easy to make, and people usually gobble them up. They are wonderful for when you need to make something fast for school, potluck, work, new neighbor, or even a quick snack or you kids/grandkids. You can see more of my crazy creations here

The best part is that it all starts with 2 ingredients!For the base you need a box of cake mix and a can of pumpkin – that’s it!(I’m using spice cake mix – but you can use any cake mix you want.)

Mix these 2 ingredients together.

We like to add chocolate chips to ours.You could put any add ins you want in for extra nutrition. Things like carrots, raisins, eggs, wheat germ, yogurt, etc.

Scoop your batter into your muffin pan. You can make 12 larger muffins or 24 medium muffins. The batter is dense so it will not rise much.

Place your muffins in a preheated oven at 350 degrees.Bake for 25 minutes. (Ovens vary in times, so be cautious the first time you make them.)

Poke a muffin with a tooth pick and if it comes out clean – they’re done.

Mix together 1 Box Cake Mix & 1 Can Pumpkin
