Protein never tasted so delicious, or seasonal! These protein bites are a festive treat that can be enjoyed for breakfast, as a snack, or dessert. Created with wholesome ingredients, this is a creative way to add more protein to your diet and simultaneously satisfy a sweet tooth.


If you are following a vegan diet, you are welcome to customize. Here are a few ideas:


Vegan:

  • Use vegan chocolate chips
  • Omit honey, or try with maple syrup
  • Use a vegan-friendly protein powder


Additional substitutions:

  • Any nut or seed butter in place of the almond butter
  • Hemp seed or whole flax seeds in place of sunflower seeds

Ingredients

  • 1 cup almond butter
  • 2/3 cup pure pumpkin
  • 1/2 cup mini chocolate chips
  • 4 1/2 tbsp vanilla protein powder
  • 3 tbsp honey (optional)
  • 1/4 cup raw sunflower seeds
  • 2 tsp pumpkin spice
  • 1 1/2 tsp flax meal
  • 1/2 pure vanilla extract
  • pinch of kosher salt
Instructions

In a bowl, thoroughly combine all ingredients until evenly distributed.
Roll into balls about 1 1/2 inches by 1 1/2 inches in diameter.
Place the balls on a parchment-lined baking sheet and allow to set in the refrigerator for about 30 minutes.
Enjoy immediately or store in the refrigerator in an air-tight container.
Tips
  • If you experience some "sweating" from the protein balls, dab with a paper towel to remove the glisten.
