Do I need to soak my dates?As long as your dates aren’t super dry, there is no need to soak them for this recipe. If they do seem dry, soak them in hot water for about five minutes, then drain and chop.

How do I store Walnut Date Balls?Store in an airtight container in the refrigerator for up to a week. You can also freeze the balls for up to a month.


INGREDIENTS FOR WALNUT DATE BALLS:

  • California Walnuts are a healthy addition to all your snacks. A growing field of research is looking at walnuts and cognitive function, including areas like healthy aging as well as mood, concentration and more.
  • Cacao powder is a less processed, healthier way to add chocolate flavor to your treats.
  • Medjool dates are a great source of fiber. Do be sure to eat them in moderation since natural sugar is still sugar.
  • Coconut flakes are optional for garnishing the finished walnut balls.
You will need these ingredients ⇧ PLUS 1 CUP OF CALIFORNIA WALNUTS.

HOW TO PREPARE NO-BAKE CHOCOLATEY WALNUT BALLS:

  • Remove pits from the dates and rough chop.
  • Add the California Walnuts, dates, cacao powder, vanilla, and salt to the bowl of a food processor.
  • Pulse to begin combining ingredients, then process for about one minute. You may need to scrape the sides of the processor bowl a few times. The mixture should be grainy but easily stick to itself when pressed together.
  • Carefully, remove the S blade from the food processor, then form into 16 equal sized balls with your hands.
  • Optional: Roll the formed balls in finely chopped coconut to coat.
  • Store in an airtight container in the refrigerator for up to a week.
Place all ingredients in food processor bowl.
Process until sandy grains form.
Optional: Roll in finely chopped coconut flakes.
