This Watermelon Salad is full of salty cheese , sweet watermelon and tangy balsamic vinaigrette,oh It's so good!


This makes a perfect side dish for summer get-together or barbeque parties!


Nothing beats cold and delicious watermelon salad on hot summer days. And don’t forget, watermelon is really good for you too. It’s loaded with Vitamin A, B6 and C, and is a great source of potassium.

This balsamic vinaigrette is super easy to make . Just mix in olive oil ,balsamic vinegar, salt and pepper and tangy & fresh salad dressing ready in less than a minute!

The salty, creaminess of quality feta combined with the sweet, crunchy summer watermelon along with fresh basil and the tang of the balsamic vinaigrette is just so fabulous and refreshing. I also added some crumbled cheddar cheese cubes.

Here I added cherry tomatoes and cucumber to this salad. You can also add onions if you want. Also sometimes I like to add roasted sliced almonds or roasted pumpkin seeds to this salad. It adds a nice crunch to this refreshing salad!

Ingredients
For the Balsamic Vinaigrette
  • 2 tbsp Olive Oil
  • 1 tbsp balsamic vinegar
  • Salt to taste
  • Crushed black pepper
For The Salad
  • 2 cups of spinach leaves or any other greens
  • 2 cups of watermelon balls or cubes
  • 1/4 cup of chopped cucumber
  • 1/4 cup of cherry tomato halves
  • Handful of feta cheese
  • Handful of cheddar cubes
  • Fresh basil leaves for garnish
Instructions
For the Balsamic Vinaigerette
In a small bowl whisk in olive oil, balsamic vinegar,pinch of salt and black pepper powder.
Mix everything well until the salt is dissolved. And once done keep it aside.
For the Salad
Cut the watermelon into cubes or use a melon-baller and scoop it into balls. And keep them aside in a large bowl.
Now in a serving dish spread the greens of your choice. Here I used spinach leaves.
Add watermelon cubes/balls on it with chopped cucumber and cherry tomato halves.
Crumble some feta cheese and cheddar cheese and sprinkle on top.
Drizzle balsamic vinaigrette you prepared and garnish with some fresh basil leaves.
Serve immediately ,Enjoy!
