This Strawberry Shrub Vinaigrette Salad Dressing is easy to make and the perfect fruity and tangy dressing for any salad! With only 6 ingredients, this salad dressing comes together in 5 minutes!


This Strawberry Shrub Vinaigrette Salad Dressing recipe is my absolute favorite dressing! It has the perfect combination of tangy, sweet, salty, and fruity to make any salad even better. I love this dressing on my Strawberry Butter Lettuce Salad, but you can put this vinaigrette on any salad you want!


A “shrub” (a.k.a. drinking vinegar) is basically an old way of preserving. Shrubs are typically a fruit and/or herb-infused syrup, made with fresh ingredients, then fortified with some type of vinegar. Check out my recipe for Fresh Fruit Shrub for more information.

Ingredients

  • 1½ tbsp freshly squeezed lime juice (you can also use lemon)
  • 2 tbsp strawberry shrub
  • 1 tbsp shallot, finely minced (you can also use onion)
  • ¼ cup extra-virgin olive oil
  • ⅛ tsp kosher salt
  • 1 pinch freshly ground black pepper
Instructions

Put the lime juice, shrub, and shallot into a small bowl and whisk together. Vigorously whisk in the oil in a stream. Add the salt and pepper and stir in.
Alternatively, you can add all of the ingredients to a salad dressing shaker or a jar with a lid and shake vigorously until combined.
