These Air Fryer Strawberry Turnovers are fun and easy to make. All you need is a pie crust, some fresh strawberries, and an air fryer and you can have these cute little pastries on your table in no time! You can also bake these hand pies in the oven. You can make these hand-held treats with homemade pie crust or store-bought. You can also make these in the oven if you don’t have an air fryer.


I love strawberries and I love my air fryer so naturally, I had to make a recipe that used both. These Air Fryer Strawberry Turnovers are so cute and delicious you are going to want to make these all the time!

Ingredients

  • 1 pie crust (homemade or store-bought)
  • ¾ cup strawberries, finely chopped
  • 2 tbsp sugar
  • ½ tsp vanilla
  • zest of half a lemon
  • 1 tbsp cornstarch
  • 1 egg, beaten
  • coarse sugar for sprinkling (I used crystal sprinkles)
Instructions

Roll out the pie dough on a floured surface to about 1/4" thick. Using a round cookie cutter, cut out as many dough rounds as possible. If needed, take the scraps and form a new ball. Roll out the dough one more time and cut out more rounds until you have 12 total.
Add the chopped strawberries, sugar, vanilla, lemon zest, and cornstarch to a mixing bowl and gently stir to combine. Spoon 1-2 Tbsp of filling on each round.
Brush the edges of the rounds with egg wash and fold in half. Use a fork to crimp the edges closed. Use a sharp knife to cut 3 slits in the top of the turnovers. Brush the egg wash on the top of the turnovers and sprinkle with sugar.
Preheat the air fryer at 350°F for a few minutes. Spray the air fryer basket with nonstick spray. Place 5-6 turnovers in the basket (make sure there is room around each one for the hot air to circulate) and air fry for 10 minutes or until the crust is golden brown. Use tongs to remove the pastries and place them on a wire rack or plate to cool. Repeat with remaining pies.
Tips
  • When you are crimping these small treats some of the filling will most likely leak out. Don’t panic, as long as most of it stays in the middle and you get a good seal, there will be no issues.
  • Don’t be afraid to adjust the amount of sugar in the filling based on how sweet or tart your strawberries are.
  • Since you brush the turnovers with egg wash, there is no need to spray them with non-stick spray as you would with other air fryer recipes. But, don’t forget to spray the basket so the pies don’t stick to it!
  • Preheating the air fryer can make a difference. Preheating will help with even cooking and less wait time in the beginning. If you don’t preheat, the first batch will cook differently than the next, etc.
  • I put a piece of foil at the bottom of my pot under the basket to catch any oil or food that falls, it makes clean up so much easier!
  • Remember to always read the instruction manual and follow what your manufacturer recommends.
  • Store any leftover pastries in a sealed container in the fridge. You can also freeze them for up to 3 months.
