How to Serve Easy Carrot Muffins for a Garden Party

I recently hosted a garden inspired brunch for a friend’s birthday. I made these yummy muffins and want to share how to serve easy carrot muffins for a garden party.

Since it was a garden theme, I thought serving muffins in terra cotta pots would be so cute. I used brown tulip cupcake liners, placed them in a muffin tin and baked the muffins in those. When they were finished baking I put them into the pots.



To finish them off, and make a fun addition to my garden inspired tablescape, I cut a brown straw in thirds, then pushed the straw into the center of the muffin. Then I cut shasta daisies from my garden and placed the stem of a flower into the straw. I had a few brown straws on hand, but green ones would be cute (it would look like a stem) or you could just use clear.



They looked so cute on my cake plate and at each place setting!

Don’t you think it’s such a cute addition to a garden themed table??


Obviously, you could use any flower you have on hand, or purchase an inexpensive bundle from the grocery store. The sky is the limit with colors of flowers, so have fun with it and choose something that works with your color scheme.


You could also make cupcakes with frosting instead of muffins.

Ingredients

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cup shredded carrots
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups all purpose flour
Instructions

Preheat oven to 350 degrees.
Line a muffin tin with paper liners or grease well.
In a large bowl, combine sugar, brown sugar, oil, eggs, and vanilla. Whisk until mixed together well.
Add in shredded carrots. Stir until well blended into the mixture.
Add baking powder, baking soda, salt, and cinnamon into the wet ingredients. Whisk to combine.
Add flour and fold into the mixture until just combined. Be sure not to over mix once the flour is added.
Divide the mixture evenly into the muffin cups.
Bake at 350 degrees for 20-25 minutes or until golden brown or until a toothpick inserted in center comes out clean.
